Build a medium-hot fire in a charcoal grill or heat a gas grill to medium-high. Grease grill grates.
In a large bowl, gently mix together turkey, carrot, sun-dried tomatoes, goat cheese, garlic, salt and pepper. Form burger mixture into 4 patties. Place burgers on grill; cook for 5 to 6 minutes per side or until an internal temperature of 165°F is reached. Remove burgers from grill. Place bun halves on grill and heat until toasted, about 20 seconds.
Pumpkin Seed Pesto
In a food processor, blend together arugula, pumpkin seeds, Parmesan cheese, garlic, lemon juice and salt. With the machine running, drizzle oil through top tube.
Serve burgers on buns topped with pesto and tomato slices.
